Did you know that…
It’s Boxing Day and I hope that you had a very merry Christmas, are enjoying seeing family and friends and are relaxing too.
As it was my first week of ‘being off’ last week, I did relax but also made soups, a protein porridge mix, kaleola (which is a granola with kale in it – it’s all done in the oven and is nicer than it sounds), made flapjacks, raw salted pistachio chocolate and really enjoyed the time off. We also went to see Passengers at Cineworld too which was good as I’d downloaded the 2-4-1 Meerket Movies deal (which is valid for a year and you can use it on a Tue or Wed at some cinemas).
Hot drinks can help to raise your body temperature in this cold weather. During the day, I love green tea and also enjoy ginger tea and in the evening, I usually have a ‘night time’ or chamomile tea. What’s your fave hot drink?
Poor quality sleep or lack of sleep is thought to upset the delicate balance of our appetite-regulating hormones ie ghrelin which stimulates hunger and leptin which lets your brain know when you’ve had enough to eat.
So constant, aimless snacking may then result. Fatigue can also increase cravings for sugary foods that give you a quick energy fix but then make you forget self-control. You’re then more likely to reach for chocolate or a sweet biscuit rather than a healthier snack. Sleep well.
Something to think about:
Warming up this winter: I just love soups, all variations using beans, pulses, veg, coconut milk, some spices and herbs. Soup is always warming, filling, comforting and keeps you feeling full for ages. I usually make red lentil, veg coconut milk soup but recently, have been making a really easy tasty soup which is roasted red pepper and tomato. It’s so easy that I put 3 chopped up de-seeded red peppers and 4 or 5 large halved tomatoes, 3 or 4 garlic cloves, 3 sprigs of rosemary and thyme in a large oven tray, drizzle with olive oil and roast for 35-40 mins at
180 degrees. When roasted, I put it all in a blender (well some of the rosemary but not the thick woody spines), add ¼ cup of tomato puree, ½ cup of stock and some salt & black pepper. You could also add some dairy cream or thick coconut milk to make it more creamy. Pour into warm bowls and enjoy straight away with some nice sourdough bread.
