Did you know that…
The bright purple skin of aubergine isn’t just pretty, it contains anthocyanin phytonutrients, a fancy name for a powerful antioxidant. This has been shown to fight against nasty free radicals and protect the lipids in brain cell membranes (info adapted from FMTV.com)
So I thought I’d give you an aubergine recipe that we often enjoy. How to make it: slice an aubergine lengthways and either grill flesh-side-up till cooked or we have a George Foreman grill and it doesn’t take long to cook on that. We also cooked some chopped onions and mushrooms in a pan and you could also add some garlic too it too. When the aubergine is cooked, lay the onions and mushrooms on the top and we like to drizzle a teaspoonful of tahini over it (extra yummy, added calcium). You’ll see in the photo that we also cooked some sweet potato wedges and grilled one of those bread squares too. So easy to make, comforting and filling. Enjoy.
Kale seems to be the superfood of the moment just now but did you know that it’s packed with vitamin K, it’s needed for the absorption of calcium, it’s full of antioxidants including vitamin A (good for eye health) and vitamin C which helps to support the immune system. I like to add kale into smoothies but it’s also great added to stews and soups too.

This is week 6 of our current 6 week Fitness Pilates courses on Tuesday and Thursdays at 7.30pm. There are spaces and you’re welcome to come along and give it a try if you haven’t before. Please encourage all your friends, colleagues, neighbours etc to join us too.
Our next, new 6 week block of classes starts next week ie Tuesday 17 in Craiglockhart Parish Church Hall and on Thursdays from 19 February in Dreghorn Loan Church Hall, Dreghorn Loan, Colinton. I hope that you’ll book your place in these classes. A block of 6 classes costs £30 payable on week 1 – this is a good way to commit to fitness, to reaching your fitness goals sooner and it saves you time paying for each individual class each time.
If you find it difficult to commit to each 6 weeks though, you can still PAYG.
If you can join us on a Wednesday and/or Friday at 9.30am in Dreghorn Loan Hall, our classes will help you to get fit too. They’re drop-in classes, no need to book, just turn up with your mat and some water and bring your enthusiasm and work out with us.

Nicola’s Insanity class is on Thursdays 6.30pm in Dreghorn Loan Hall. It’s a high intensity interval training class and it’s on for 45 minutes. Bring a mat and some water, wear trainers and prepare to work as hard as you can (you don’t have to keep up with anyone else and there are alternatives which Nicola demonstrates too). The class is only £4 and it’ll really fire up your metabolism and get you in shape, fitter and stronger.
Nicola’s 30 minute Metafit class / or a run round the Meadows is on Saturdays in the Meadows 9.15am. Let me know if you’d like to join us or meet us at Stay Central Hotel, Cowgate at 8.55/9am or Peter’s Yard, Meadows at 9.10am. Everyone (16+ and non-pregnancy) welcome in both classes.
