Hi, welcome to this week’s newsletter:

I was hoping that we could have our first outdoor/outdoor class last Thursday at Paties Road Recreation Grounds.  When I planned it & mentioned it in last week’s newsletter, the weather forecast looked ok for Thursday but then as the week went on and the forecast changed (and not in a good way), I think we had just about every kind of not-so-great weather on Thursday ie rain, hail, snow etc.  I wanted to give you notice and not wait until the very last minute as I know we all have to plan or rearrange so decided to cancel and do another recorded class instead.  So apologies for cancelling but apart from the rain etc, the grass would’ve been sooo wet.

If only we’d had Friday’s weather on Thursday, it would’ve been great but … we didn’t.

As we all know, understand & agree, the weather forecast can change so quickly and it makes it difficult to organise and plan and stick to ‘the plan’.

However … (famous last words!).. I’ve had a look at the BBC weather forecast and Tuesday looks tropical at 14 degrees & sunny around 6pm and probably (so far) the best day & early evening between Tue & Thurs this week.

I’m still planning to do both outdoor 6.15pm classes though and look forward to seeing you too.

Years ago, I made recipes from Taste Made recipes then forgot all about them but recently came across their website which has various categories of recipes and thought you might like to have a look if looking for inspiration or to try something different.

On tastemade.com, there are other categories to check out other than recipes ie: travel, home design, experiences, live TV and food.

I love using chia seeds in a smoothie or chia seed pudding.

Did you know that these small seeds are full of omega-3 fatty acids that play a vital role in many aspects of health, especially brain function & heart health.  Apart from lowering the risk of heart disease, omega-3s are very effective in reducing inflammation and supporting digestive function, reducing blood pressure and even helping to prevent and treat depression.

Here’s a recipe (not on the website above) for a berry & cinnamon chia pud (serves 1-2)

1¾ cup non dairy milk, ½ cup porridge oats, 4T chia seeds, 1T ground flaxseed, 1T maple syrup or honey.

For berry compote: ½ cup each of frozen rasps & blackberries (or other berries), 2T maple syrup, 1T hot water.

Choc sauce: 1½T maple syrup, 1½T non dairy milk & 2T cacao powder.

To make the chia pud: process oats in processor until finer, add milk, chia seeds, flaxseeds & sweetener & stir.  Pour into a bowl & leave in the fridge for at least 30 mins to thicken.

To make the compote: just add the ingredients to a food processor & blend & pour into a saucepan on a low heat & cook until the mixture thickens slightly.

For the choc sauce: stir or whisk the ingredients together until smooth.  Add more cacao powder if too runny.

After that, drizzle the sauce & fruit compote over the chia pudding & top with fresh berries and/or coconut & enjoy.

It’s National Vegetarian Week ie 10-16 May.

Have you checked in with your own relationship status lately?  If not, do it now & commit to inner peace, growth, self love and gratitude.

Good advice/something to think about:

We don’t grow when we stay in our comfort zone.  Do something scary/something that would normally be outside of your comfort zone.

Note to self: Take the risk.  Don’t let the unknown stop you from progressing.

The only difference between where you are and where you want to be, is the steps you haven’t taken yet.

Always great to remind ourselves of every day:

  • Care for our own body
  • Eat well
  • Hydrate
  • Move more
  • Sleep well
  • Be positive – mental health is just as important as physical health
  • There’s no such thing as too late

Mindset: It’s all about mindset, from the moment you wake up, to the moment you rest your heat at night.  Everything is up to you: your emotions, your thoughts, your perceptions, your reactions.  Every moment.  (from #bakcwards)
